To cut through the confusion, it helps to borrow the same map that nutrition researchers use. Instead of sorting food into "good" and "bad," they sort it by how much it has been changed and why. The most widely used version of this map is the NOVA food-classification system, developed by Carlos Monteiro and his colleagues at the University of São Paulo, and it sorts everything into four simple groups.
A Simple Way To Picture It
Imagine a spectrum that runs from "straight from nature" to "built in a factory."
At one end sit the unprocessed and minimally processed foods, the foods that look more or less like themselves. Think fresh and frozen fruits and vegetables, plain grains, eggs, milk, plain yogurt, fresh meat, and nuts. These have either been left alone or only lightly altered by drying, chilling, freezing, or pasteurizing, with nothing added.
Next come the culinary ingredients, the building blocks you cook with rather than snack on by the handful: oils, butter, sugar, honey, and salt. On their own they're not a meal, but they're what turns raw ingredients into dinner.
Combine those first two groups in simple ways and you get processed foods, which we'll spend more time on in a moment. And at the far end of the spectrum sit the ultra-processed foods, the industrial creations that are the real focus of all those worrying headlines. The beauty of picturing food this way is that you stop asking "is this processed or not?" and start asking the better question: "how far along the spectrum is this, and does that matter here?"
